Chilled Avocado
Cucumber Soup
The

Serves 4
Ingredients:
2 Large seedless cucumber, sliced (don't peel)
1/4 Cup of water
1 Cup nonfat plain yogurt
2 Large avocado chopped
3 Scallions (white part only)
1/4 Cup loosely packed cilantro leaves
1/4 Cup loosely packed parsley leaves
2 tbs fresh lime juice
1/2 tsp kosher salt
1/4 tsp black pepper
1 Small carrot, grated
1. In a blender,
place the cucumber, avocado, herbs, scallions,and water. Puree
until smooth. Add the yogurt and puree to combine.
2. Season
with the lime juice and puree until blended. Add the salt and
pepper and taste. If soup seems too thick, add a little water.
Serve chilled and garnish with grated carrot and a cilantro leaf.
