Arancini (rice balls)
The Wine Experience Recommendation: Chianti
Serves 4 (8-10 as appetizer)
3 c. rice (cooked per package instructions)
1 lb. ground beef (cooked and drained)
Marinara sauce
2 eggs plus 2 yolks (reserve whites for dipping later)
1/2 c. bread crumbs
1/2 c. grated pecorino romano cheese
3 c. grated mozzarella cheese
salt/pepper (to taste)
fresh parsley (chopped)
seasonsed bread crumbs (for breading)
Prep above ingredients. Mix together all ingredients. Roll into medium size balls. Dip in egg white and then dip into seasonsed breadcrumbs. Deep fry in oil until golden brown; drain on paper toweling and serve. You can keep warm in oven until ready to serve. Serve with your favorite mariana sauce for dipping as party appetizer, or spoon over the top if served as a starter for dinner.
