Chicken with Olives

Chicken with Olives
The Wine Experience Recommendation:  Chardonnay
Serves 2-3

Ingredients:
1 cut up whole chicken
1/2 lb. green pitted sicilian olives mixed with oil to cover, 4 chopped cloves of garlic
1 large onion sliced thin
Garlic powder
Fresh Italian parsley, cut up (3-4 ounces)

Directions:
Saute onion in olive oil until translucent and set aside.  Wash and dry chicken thoroughly, season with salt, pepper, garlic powder, parsley and oil, just enough to rub all pieces of chicken.  Bake at 400 1/2 hr. reduce oven to 350, add olive mixture, onion, mix well, coat with parsley and bake another 1/2 hr. to 45 minutes.
