Cooking With Wine and Chef Dana B       

The Wine Experience is featuring Chef and Cooking Instructor Dana Benigno.   We talked with her about using wine in the preparation of meals and got her tips for cooking with wine.

"Wine can be a key ingredient in many dishes.  

Its acidity and flavors help to bridge and bring together the other ingredients.  

So here's what I tell my students:

First, never use "cooking wine."   These products are typically loaded with preservatives and salt.  

Next, always use a wine good enough to drink.   After all, this is a key part of your dish.   Now this doesn't have to mean expensive wine. good, value priced wine is fine.  

Another tip . . . cooking is a great way to use leftover wine . . . why let it go to waste!

And finally, when you cook with wine be sure to cook it down.   This means letting the alcohol cook off until the concentrated flavor of the wine remains.   And don't forget, you can always sip a little while you cook, too!"
