There's
so-called 'conventional wisdom' about everything. And when it
comes to wine and food, toss the red with meat, white with fish
thing out the kitchen window!
Talking
about fish, seafoods that are firmer in texture and more oily
or flavorful work great with red wines. Here are some wine choices
with some typical preparations . . .
Grilled salmon, whether hot or cold, pairs up with Oregon or other
Pinot Noir-based wines
Serve baked halibut and Chianti Classico or try some broiled swordfish
with a Spanish Rioja.
Seared ahi is terrific with a Cotes du Rhone or an Australian
Shiraz
But here's the kicker . . . if you like barbeque (and who doesn't)
fire up the grill and try a salmon steak with California Zinfandel
Remember,
matching wine and food is all about how they balance each other,
add to the experience, or complement the flavors.
